Ingredients
250ml Cream
200g salted butter
250g bar black chocolate
350g wheat flour
400g sugar
30g cocoa
1½ tsp. bicarbonate of soda
2 eggs
250g natural yogurt
425g dry cherries
1tsp. reserved cherry juice rest drained
150g cherry jam
Method of preparation
- Preheat the oven with about 180*c and grease and line the baking tin.
- Gently heat the butter and 75g chocolate chunks and wait until it is completely melted
- Sift the flour, sugar, cocoa, and bicarbonate of soda and salt.
Blend the eggs and yogurt together. Rub the melted chocolate mixture and egg mixture into the dry ingredients,
- Add 150ml boiling water and whizz briefly with an electric blend until the batter does not contain the lumps.
- Put the batter into the pan and bake for 40minutes until ready.
- Prick the cake with a knife to check if it is ready.
- Mix the reserved cherry juice and sprinkle on the cake. Cool it by refrigeration.
- Mix the cherries and jam. Tip 250ml of the cream into a small pan and heat until below boiling point.
- Minced the chocolate and put in a bowl, put the hot cream, and stir until melted. Set aside until spreadable.
- Whisk the cream and the icing sugar together to make a soft paste and Spread over the cake. Pile the fresh cherries in and around the cake and serve
