Follow this dark chocolate coconut bites recipe for dessert bites that are naturally sweet and creamy on the inside and covered with a layer of delicious chocolate which is a perfect after-dinner combo for you.
INGREDIENTS:
Serving: 18 small balls
- Desiccated coconut 2 cups
- Coconut oil 5 tbsp.
- Honey or Maple syrup 4 tbsp.
- Dark chocolate ½ cup (for melting)
- Vanilla extract 1 tsp
- Salt 1 pinch
PROCEDURE:
Step 1:
Put coconut in a food processor and blend it until it forms a texture like thick flour.
Step 2:
Transfer the blended coconut in a bowl and add salt, honey or maple syrup, coconut oil and vanilla extract. Mix all the ingredients until they combine well, forming a thick paste.
Step 3:
Squeeze the mixture well using your hands and make 18 small balls of it. Place the balls into the refrigerator for 30 minutes or until firm.
Step 4:
Meanwhile, melt the dark chocolate in oven or on stove until it forms a thick smooth liquid.
Step 5:
After the balls get firm take them out of refrigerator, dip each ball in dark melted chocolate using 2 forks. Layout a sheet of wax paper on a tray and place the mouth-watering coconut balls on it. Cool these chocolate covered coconut balls in the refrigerator and enjoy. Sprinkle some ground coconut on top. (optional)
