This is the public blog and website for the course African and African American Studies 119x: Chocolate, Culture, and the Politics of Food, designed and taught by Carla D. Martin [ Founder and Executive Director of the Fine Cacao and Chocolate Institute ] at Harvard University in the spring semesters of 2013, 2014, and 2015. All posts are written and published anonymously by undergraduate and graduate students enrolled in the course. Course Description:
This course will examine the sociohistorical legacy of chocolate, with a delicious emphasis on the eating and appreciation of the so-called “food of the gods.” Interdisciplinary course readings will introduce the history of cacao cultivation, the present day state of the global chocolate industry, the diverse cultural constructions surrounding chocolate, and the implications for chocolate’s future of scientific study, international politics, alternative trade models, and the food movement. Assignments will address pressing real world questions related to chocolate consumption, social justice, responsible development, honesty and the politics of representation in production and marketing, hierarchies of quality, and myths of purity.

We work closely with the craft chocolate community in the U.S. and in cacao-growing regions, sharing profits and contributing to social justice projects across the world. Our tastings and work have been featured in The New York Times and Bon Appetit, and on the History Channel.
Chocolate.org features handmade, artisan chocolates and gift baskets from independent chocolate shops across the USA. Our goal is to make unique chocolate’s available to gift buyers and chocolate lovers. We believe that the finest chocolate is found in small chocolate shops around the globe and celebrate the fact that every chef has a unique approach. Our vendors provide a product that is more fresh, more artistic, and less common than factory-made chocolate.
CocoaTown is the first company that identified the equipment need for making craft chocolate from cocoa beans called Bean to Bar industry. We design, develop, manufacture and market patented machines to create “Bean to Bar” chocolate and gourmet foods. We have a strong R&D department and constantly improve our machines based on customer feedback. We employ advanced manufacturing methods such as laser cutting, CNC machining, 3D design etc. We are a truly innovative company and have patents for two lines of machines and are in the process of obtaining one more.
We are located in Atlanta GA, USA but ship around the world. CocoaTown has received "Globe Award" for exporting to new markets, from State of GA for 2018 & 2019.
We provide education and training in bean to bar process. We help our customers to participate and sell their chocolates in International chocolate festivals.
