Ingredients
4 eggs
100ml strong instant coffee
200g dark chocolate
2 tablespoon caster sugar
Method:
- Mix chocolate together with the coffee melt in a microwave. Beat the egg yolks into the chocolate one by one.
- Separate egg whites into a bowl and beat until they form soft peaks. Add the sugar slowly and beating at the same time until the point at which they begin to form stiffer peaks. Beat gently not to overbeat.
- Fold egg whites gently into the chocolate mixture in three parts.
- Fully incorporate and transfer the mixture into vessels, bung them in the fridge, and don’t serve for one hour.
